Gailan, or Chinese Broccoli, is a leaf vegetable with flat, glossy green leaves and thick stems, and florets that resemble but are much smaller than broccoli. It is typically eaten stir-fried with garlic or steamed and dipped in oyster sauce. We recommend blanching the gailan first to soften the stems.
